POSITION INFO:
A luxury safari lodge is seeking an experienced and qualified Head Chef to lead and manage all kitchen operations. The role requires ensuring consistently high-quality cuisine, compliance with food safety standards, and the creation of a professional, respectful, and well-organized kitchen environment.
Core Criteria:
- Proven experience as a Head Chef in a luxury lodge, hotel, or fine-dining restaurant.
- Relevant professional culinary qualification.
- Strong leadership, organizational, and people management skills.
- Knowledge of South African food safety, hygiene, and labor legislation.
- Experience with kitchen administration, stock control, and budgeting.
- Excellent communication and interpersonal skills.

Candidate Responsibilities:
- Oversee the main kitchen and satellite kitchen operations.
- Plan and develop menus, accommodating dietary requirements and allergies.
- Prepare and present meals for guests and staff at a high standard.
- Train, supervise, and manage kitchen staff performance in line with company policies.
- Foster a positive, respectful, and productive work culture no shouting, swearing, or derogatory behavior.
- Ensure compliance with food safety, hygiene, health, and safety legislation.
- Maintain cleanliness and organization across kitchen, storage, and scullery areas.
- Manage stock control, ordering, stock takes, and minimize food wastage.
- Control kitchen budgets and food costs.
- Ensure all kitchen equipment is properly maintained.
- Prepare duty rosters and manage staffing requirements.
- Collaborate effectively with Front of House for seamless service delivery.
- Engage with guests professionally to ensure satisfaction and address feedback.
Package:
Work cycle: 36 days on duty, followed by 12 days off.
21 annual leave days, taken at times convenient for the lodge.
Private accommodation in the staff village (own room and bathroom, on-site).
Three staff meals daily, plus laundry and room cleaning services.
