Head Chef

A suitable position for an energetic qualified Chef with at least 3 years working experience as a Chef.

Requirements:

• Minimum Culinary School Diploma / qualification
• Minimum 3 years experience as Chef
• This is a working chef position: preparation, plating and in-service is expected as well as management
• Liaise well with owners and other managers
• Manage kitchen staff and front of house staff to establish and maintain smooth work relationships in the restaurant
• Delegate responsibilities to staff and ensure tasks are completed on a timely manner.
• Ensure kitchen production and presentation is maintained at its highest level at all times
• Ensure all mise-en-place is correctly prepared prior to commencing of service
• Execute the menu as designed
• Manage provisions, purchasing and waste control
• Conduct regular checks on all food products for any expired item
• Prepare costing analysis and work with vendors to improve quality of supplies and pricing
• Manage vegetable garden
• Create items for retail sale in the Wine Shop
• Ensure maintenance work is completed in a timely and professional manner
• Manage Restaurant and working areas
• Assist with occasional special events and VIP visitor experiences
• Be mindful and flexible in handling guest food allergies and preferences
• Have a good knowledge of food safety systems (HACCP)

Working hours Wednesday to Sunday 08h00 - 17h30.
