Head Chef | Kruger Park Area | Luxury Lodge Group
We are currently looking for a experienced HEAD CHEF JOB to join this well-known, luxury group of lodges located in Sabi Sands game reserve, bordering with Kruger Park.
The Head Chef is responsible for planning and directing food preparation in the Kitchen. This will involve a large degree of employee management. You will be required to act in the Executive Chef’s absence and to ensure that the kitchen runs in the same professional manner when the Executive Chef is not on duty.
Key Focus Areas for Head Chef Job:
- design and implement menus for the lodges that meet the demands and exceed the expectations of Guests
- comprehensive knowledge of current leading culinary trends in food and beverage
- provide effective leadership through professional management and encouragement of all subordinates
- implement effective operational standards for the Lodges'' kitchens
- implement and maintain efficient financial budgetary and procurement controls
- prepare budgets and aim to achieve budgeted gross profit, and not exceed budgeted monthly Food Costs
- ensure all month end administration is completed accurately and on time
- coordinate an effective and efficient payroll management / resource allocation through establishing a flexible work force throughout the department
- to manage and monitor all costs and implement measures to control them
- assume full responsibility for costs, stores, losses, discrepancies and expired stock items
- targeting costs to deliver a consistently excellent product.
Team Support and Product Knowledge:
- In depth knowledge of food preparation and Food Hygiene
- experience with and understanding of all dietary and religious requirements
- knowledge of menu compilation and international, up to date market trends
- knowledge and understanding of stock procedures and control
- knowledge of product and supply
- knowledge of planning, budgeting and departmental administration
- knowledge of creating, implementing and maintaining written control documents and training manuals
- knowledge of accounting principles, such as assessing P&L statements and forecasts
- excellent attention to detail
- excellent communication skills (written and verbal), practicing honest communication
- excellent time management and self-discipline, interpersonal and problem solving skills
- proactive, use initiative and creative flair when required
- leadership skills with passion for development and skills transfer
Requirements for Head Chef:
- Grade 12/NQF Level 4 (essentail)
- 8 Years of Hospitality experience & 2 years of Senior Chef/Senior Sous Chef experience(essential)
- formal qualification from a reputable culinary institution
- a quick innovative thinker with great people skills, diplomacy and able to remain focused but professional
- valid driver''s license
Start date: ASAP
