Our client, a top artisan coffee & tea company, is looking for a new Head Chef for their daytime café - to run the kitchen/bakery operations.
The ideal candidate will be innovative, reliable, and excellent with planning and execution. The goal is to keep the quality of their food and service as well as customer satisfaction up to a high standard.
Requirements:
This position requires an experienced person to manage all aspects of a busy kitchen & bakery
- Food skills - The head chef must have a high level of training and experience in food preparation. Food must be of consistently high quality and must be delivered to customers efficiently (quickly).
- Communication and people management & leadership - The chef must have great customer and staff relations skills, be an excellent communicator, and be able to supervise, lead and to motivate his team.
- Organization - The manager requires strong organizational skills to effectively manage all aspects of the running of the kitchen & bakery, including workflow, rosters, ordering and stock control.
- Stock control - Liaising with suppliers, optimizing quality and pricing, ensuring correct ordering & procedures, managing stock levels and portion control, and minimizing waste.
Overall responsibility for health and hygiene and safety of staff in the kitchen & bakery.
Responsibilities:
- Supervise all staff that are cooking and preparing food in the kitchen & bakery.
- Actively participate in the cooking and other activities of the kitchen for a significant portion of his/her time, except when involved in recipe development or admin.
- Ensure that all kitchen & bakery activities follow the delivery schedule to the floor – e.g. delivery of breakfast pastry in time for start of trading in the morning, baking of breads in time for lunch prep, etc.
- Coordination with the restaurant manager to ensure that stock of food items is maintained at suitable levels to maximize sales while minimizing waste.
- Coordinate with the floor staff on all orders and on replenishing pre-made items as needed.
- Prep - Make sure that all preparation is done by the team so that food can be delivered in the shortest possible time at the highest standard.
- Portion & Ingredient Control – Ensure that staff accurately follows all recipes to ensure that the correct amount of stock is used to create food items.
- Efficiency – ensure that staff work quickly and efficiently to deliver accurately prepared orders.
Area: De Waterkant, Cape Town.
Salary: R15 000 p.m (negotiable)
