POSITION INFO:

KEY OUTPUTS

 

  • Directs food preparation and collaborates with Head Chef and Executive Chef
  • Produces high quality plates, ensures consistency
  • Assists with menu planning, inventory and management of supplies
  • Offers suggestions and creative ideas that can improve upon the kitchen’s performance
  • Good all-rounder who can fit into any department in the kitchen
  • Good Teamwork to be promoted as well as ability to work alone
  • Always be approachable
  • An understanding of working remotely
  • Have full knowledge and understanding of the menu and the execution of all aspects of this menu
  • Work with the company’s Training Chef when visits are conducted and be feedback fit
  • Presentation as discussed and according to Styling Guide and menu training
  • Up to date with new dietaries and guest preferences
  • Have the correct knowledge of what cleaning materials we are meant to use
  • Control waste management and strive to waste as little as possible
  • Ensure contact is made with each guest on a daily basis to ensure their dietary needs are met and be willing and able to deliver on requests
  • Always be presented neatly and hygienically; wear the full uniform as stipulated by company policy at all times when in front of guests. When working in the kitchen, the correct company clothing should be worn
  • Look after equipment and knives
  • Keep a rotation of goods going to avoid losing stock by expiry and inform the head chef of any items that needs to be used up or incorporate the said items into the menu as needed in the absence of the Head Chef
  • Be willing to cover in other sections of the kitchen when needed as our kitchens work together as a team
  • Good communications with:

  • All Camp Managers
  • Heads of Department
  • Lodge Manager
  • All staff
  • Local suppliers
  • Regional Chef
  • All food going out to guests at any time to be checked in absence of the executive chef or on your shift
  • Good interaction with Guests: Invite feedback
  • Good discipline and fair treatment: Be a Role Model
  • Be aware of and make your follow chefs aware of special dietary needs for Guests
  • When special dietary Guests arrive at the lodge ensure that either yourself or another chef meets the Guest before their first meal to establish their requirements
 
SKILLS REQUIRED
 
  • 5 Years’ work experience in a fast paced 5 Star environment
  • Have a good verbal understanding and a written knowledge of English
  • Formal Culinary training is advantageous
  • Understanding of level 1 health and hygiene for food handlers
  • Good knowledge of food preparation, knife skills and food service
  • Pastry knowledge will be an advantage
  • Passion for kitchen management – including all kitchen administration, general hygiene and people management
  • Computer literacy will be an advantage
  • Experience within the company will be advantageous
