JOB SUMMARY:
Assistant Food and Beverage Manager ***
R18 700 to R22 000 per month depending on experience.
Central Drakensberg, Kwazulu-Natal

JOB DESCRIPTION:

Minimum requirements:

Manage a team of 6 x Duty Managers, 5 x Team leaders, and a staff complement of x 130.
Knowledge of Kitchen Operations and be able to work with the Executive Chef.
Knowledge of menus (design/implementation) and costing
Beverage – knowledge of wines / able to plan specials seasonally through the year.
Stock Control (Food and Beverage)
Management and Control of OE / Capex
Supplier Relations
Cost of Sales Food and Beverage
Restaurant and Bar Management
Banqueting and Functions – minimum 200 Pax and over.
Guest Relations
Control revenue and budgets
Continuous staff training
Legislative Compliance OHSA/LRA/BCEA
Labour Relations and HR
Computer literate (Opera/Micros) and competent administration skills
Food and Beverage Management Certificate/Diploma an added advantage
3 to 5 years’ experience in similar position (this term is open to negotiation)
