Fine Dining | Northern Suburbs Wine Estate

An established fine dining restaurant based within a premium wine estate in the Northern Suburbs is currently recruiting for a Chef de Partie to join its culinary brigade.

The kitchen operates on structured rotational shifts (08:00–15:00 or 15:00–22:00) with two off-days weekly.

Due to the estate location and shift requirements, candidates must reside within the Northern Suburbs and have their own reliable transport (non-negotiable).

A prestigious fine dining restaurant that continues to grow and expand, we are looking for an experienced and passionate Head Chef to join the team and lead the kitchen.

Role Overview:

The ideal candidate will have a passion for culinary excellence, a strong leadership background, and the ability to deliver exceptional dishes that uphold our restaurant’s reputation. You will be responsible for overseeing kitchen operations, menu creation, staff management, and ensuring the highest standards of food quality and presentation are maintained.

Key Responsibilities:

• Menu Creation and Development:
  Design, plan, and update the menu to reflect seasonal ingredients and culinary trends while maintaining the restaurant's signature style and standards.
• Kitchen Management:
  Lead, manage, and train a team of chefs and kitchen staff, ensuring all roles are performed efficiently and to a high standard.
• Food Quality Control:
  Ensure that all dishes are prepared and presented according to our restaurant's standards and quality expectations.
• Cost Control and Inventory Management:
  Oversee ordering, stock management, and inventory control to ensure efficient use of resources and maintain food cost control within budget.
• Health and Safety Compliance:
  Ensure adherence to all food safety, sanitation, and health regulations, maintaining a clean and safe kitchen environment.
• Staff Training and Development:
  Mentor and train junior chefs, ensuring they are up-to-date with techniques, safety procedures, and service standards.
• Collaboration and Innovation:
  Work closely with the front-of-house team to ensure seamless coordination and create a memorable dining experience for guests.
• Customer Satisfaction:
  Ensure that the food is of the highest quality, and take responsibility for resolving any culinary-related customer feedback in a positive and professional manner.

Required Skills and Experience:

• Extensive Fine Dining Experience:
  Experience in a fine dining, with a proven track record in high-level culinary roles.
• Culinary Qualifications:
  Professional culinary training from a recognized institution.
• Leadership and Management Skills:
  Demonstrated ability to lead a team, manage kitchen staff, and maintain a positive working environment under pressure.
• Creativity and Passion for Innovation:
  Strong culinary creativity with the ability to create unique, sophisticated dishes that push boundaries while maintaining exceptional taste and presentation.
• Knowledge of Food Trends and Techniques:
  Expertise in current fine dining trends, advanced cooking techniques, and modern kitchen equipment.
