Head Chef

SUMMARY:
The Head Chef is responsible for the overall management of the lodge kitchen, ensuring the delivery of exceptional culinary experiences that reflect the lodge's luxury standards. This role oversees menu planning, food preparation, staff management, stock control, budgeting, and compliance with food safety regulations while maintaining consistency, creativity, and operational excellence.
 
Key Responsibilities

• Oversee the daily operation of the kitchen, ensuring smooth and efficient service.
• Plan, develop, and implement innovative seasonal menus that align with the lodge's brand and guest expectations.
• Prepare and present high-quality meals with exceptional attention to detail.
• Supervise, train, mentor, and motivate the kitchen team.
• Allocate duties and prepare staff schedules to ensure adequate kitchen coverage.
• Ensure consistency in food quality, taste, and presentation across all meal services.
• Manage food ordering, receiving, storage, and stock rotation.
• Conduct regular stock takes and maintain accurate inventory records.
• Monitor food costs, minimise waste, and control kitchen expenses in line with budget.
• Build and maintain strong relationships with suppliers and ensure the procurement of quality ingredients.
• Ensure compliance with HACCP, food safety, hygiene, and health and safety regulations.
• Maintain a clean, organised, and efficient kitchen environment.
• Cater for special dietary requirements, allergies, and guest preferences.
• Coordinate private dining experiences, bush breakfasts, boma dinners, and special events where applicable.
• Monitor and maintain kitchen equipment, reporting maintenance requirements promptly.
• Collaborate with the Food & Beverage and Lodge Management teams to deliver exceptional guest experiences.
• Handle guest feedback relating to food and continuously improve the dining experience.
• Prepare departmental reports, assist with budgeting, and monitor kitchen performance.

POSITION INFO:
Minimum Qualifications Grade 12 (Matric). Professional Chef Qualification, Diploma, or Degree in Culinary Arts from a recognised institution. Food Safety or HACCP certification (advantageous). Experience Minimum of 5 years' experience as a Head Chef, Executive Chef, or Senior Sous Chef within a 4-star or 5-star lodge, luxury hotel, or fine dining establishment . Proven experience managing a professional kitchen and leading a culinary team. Experience in menu planning, recipe development, and food costing. Experience with stock control, supplier management, and budgeting. Experience catering for international guests and special dietary requirements is advantageous.
