SUMMARY:
The Senior Pastry Chef is responsible for overseeing the pastry and dessert section of the kitchen, ensuring the consistent production of high-quality breads, pastries, desserts, cakes and confectionery in line with the establishment’s standards. The role requires strong technical pastry skills, creativity, attention to detail and the ability to lead and develop a pastry team.
The Senior Pastry Chef will work closely with the Executive Chef and wider culinary team to develop innovative menus, maintain food quality and presentation standards, manage stock and control costs. The successful candidate should have experience in a high-end hotel, lodge, restaurant or fine-dining environment and be comfortable working in a fast-paced, professional kitchen.
Key Responsibilities
- Oversee the daily operation of the pastry section and ensure smooth kitchen service.
- Prepare and oversee the production of pastries, breads, cakes, desserts, chocolates and other confectionery.
- Develop creative and seasonal dessert and pastry menus in collaboration with the Executive Chef.
- Ensure all pastry products are consistently prepared and presented to a high standard.
- Lead, train, mentor and supervise junior pastry chefs, commis chefs and kitchen assistants.
- Maintain excellent standards of hygiene, cleanliness and food safety within the pastry section.
- Monitor stock levels and ensure correct storage and rotation of ingredients.
- Assist with ordering and controlling pastry-related ingredients and supplies.
- Minimise wastage and maintain effective portion and cost control.
- Ensure all recipes, preparation methods and presentation standards are consistently followed.
- Assist with menu planning, costing and recipe development.
- Maintain accurate records relating to stock, wastage and production.
- Work closely with the Executive Chef and other kitchen departments to coordinate service.
- Ensure desserts and pastry items are ready and presented on time for all meal services and special functions.
- Stay up to date with current pastry techniques, trends and presentation styles.
- Assist with special events, weddings, functions and bespoke guest requests where required.
- Ensure compliance with company policies, HACCP standards and health and safety regulations.
POSITION INFO:
Qualifications Formal qualification in Professional Cookery, Patisserie, Pastry Arts or a related culinary field. Culinary qualification from a recognised institution will be advantageous. Food safety\/HACCP training is advantageous. Experience Minimum 3-5 years' experience in a pastry chef role , preferably within a luxury hotel, lodge, resort or fine-dining environment. Previous experience in a Senior Pastry Chef \/ Pastry Sous Chef position is advantageous. Proven experience supervising and developing a pastry team. Strong experience producing high-quality pastries, desserts, breads, cakes and confectionery. Experience with menu development, recipe costing, stock control and food cost management.
