Senior Sous Chef

SUMMARY:
We are seeking a talented and passionate Senior Sous Chef to join the culinary team at our prestigious 5-star lodge in the Eastern Cape. The ideal candidate will bring creativity, consistency, and leadership to the kitchen, ensuring the highest standards of food preparation, presentation, and guest satisfaction.

Minimum Requirements:

• 3–5 years’ experience as a Sous Chef in a 5-star lodge, hotel, or fine-dining environment
• Relevant culinary qualification or professional chef training
• Strong leadership skills with the ability to train, mentor, and motivate junior chefs
• Excellent knowledge of food trends, seasonal produce, and menu planning
• Strong organisational skills and attention to detail
• Ability to work under pressure and maintain consistency in a fast-paced environment
• Flexible and willing to work shifts, weekends, and public holidays
• Passionate about delivering exceptional guest experiences

Key Responsibilities:

• Support the Head Chef in daily kitchen operations and overall management
• Lead the kitchen team in the Head Chef’s absence
• Assist in designing, planning, and executing creative menus with a focus on fresh, locally sourced ingredients
• Maintain the highest levels of food quality, safety, hygiene, and presentation
• Manage stock control, ordering, and food cost management
• Train, develop, and inspire the junior kitchen team
• Ensure smooth service delivery for lodge dining, special events, and private functions
• Uphold lodge standards of excellence and contribute to a memorable guest experience
