SUMMARY:
A Big Five game reserve in the Eastern Cape is seeking an experienced SENIOR SOUS CHEF to join their kitchen team.

POSITION INFO:
This is a senior culinary role within a well-established five-star lodge environment, ideal for a chef who can run a shift with authority, manage a brigade under pressure, and still keep an eye on the guest experience at the same time. Core Criteria: Diploma or other formal qualification in Culinary Arts Minimum of 5 years' experience in a senior culinary role within a 5-star lodge or hospitality environment Proven experience leading and managing kitchen brigades Strong understanding of food costing, stock control, and wastage management Working knowledge of Micros\/POS systems and Microsoft Office Valid driver's license Excellent spoken and written English Sound knowledge of Food & Beverage service principles Core Responsibilities: Run daily kitchen shifts and lead pre-shift briefings with front and back of house teams Manage guest requests around menus, dietary needs, and special occasions with clear communication Uphold food quality, presentation, and service standards across every dish leaving the kitchen Enforce standardised recipes, portion control, and plating consistency across the brigade Keep menus, recipes, and kitchen documentation organised and up to date Oversee daily kitchen administration and record-keeping Ensure full compliance with food safety, hygiene, and health and safety standards Motivate and manage kitchen staff through both prep and service Handle stock control, ordering, food costing, and wastage management Support all sections of the kitchen to keep service running smoothly Train and mentor junior chefs to build a consistent, high-performing team Live-in position Work cycle: 21 days on, 7 days off
