POSITION INFO:
A world-class luxury hospitality establishment renowned for delivering exceptional guest experiences is seeking an analytically sharp, operationally grounded F&B Cost Controller to join their central finance team. This position is custom-built for a commercially focused finance professional who excels at auditing high-volume inventory movements, dissecting margin profiles, and protecting profitability across fine dining and beverage operations. Operating at the intersection of executive culinary management and corporate finance, you will hold direct responsibility for full-lifecycle stock audits, procurement controls, recipe engineering, and cost-of-sales analytics. Key Responsibilities: Procurement & Receiving Governance: Audit incoming goods against authorized purchase orders, verify supplier documentation, and enforce rigorous three-way invoice matching protocols. Inventory Control & Stockroom Audits: Conduct periodic beverage counts and monthly stocktakes across all bars, cellars, and storage facilities, tracking inter-outlet stock movements and investigating variances. Loss Mitigation & Yield Management: Monitor stockholding thresholds to minimize spoilage, shrinkage, and unauthorized usage across food and beverage departments. Cost Analytics & Performance Reporting: Calculate weekly food and beverage cost-of-sales percentages, compiling daily and monthly management reports with detailed variance commentary against budget. Recipe Costing & Menu Engineering: Partner with the Executive Chef and F&B management team to establish standard portion controls, maintain recipe costing sheets, and evaluate menu profitability. Internal Controls & Fraud Prevention: Enforce strict adherence to internal procurement policies, identify operational risk areas, and prepare audit-ready documentation for internal and external reviews. Job Experience and Skills Required: Experience Track: A minimum of 2 to 3 years of reference-backed experience dedicated to F&B cost control, procurement management, or specialized hospitality finance. Technical Mastery & Systems: Advanced operational capability in Microsoft Excel paired with practical experience operating point-of-sale systems (such as Micros or equivalent). Core Competencies: Strong command of cost-of-sales methodologies, variance analysis techniques, and inventory control frameworks. Non-negotiables: Exceptional numerical precision, sharp investigative skills, high ethical standards, and the assertive communication skills needed to align operational teams with corporate cost targets. Advantageous Criteria: A completed tertiary qualification in Hospitality Management, Finance, Accounting, or Supply Chain. Direct prior experience operating within a luxury hospitality, boutique hotel, or fine dining environment. Familiarity with specialized hotel management software (HMS), recipe costing platforms, and food safety standards.
